… there are many shades of grey.
Well, there is only one shade of grey, when I look outside the window these days. The summer left and fall is obviously taking over. There is not much we can do about that… just stay at home, make some tea and.. bake 🙂 Which does not only improve the mood, but also keeps the appartment warm and cozy 🙂
This time I decided to go for black&white cupcakes. With that theme you always satisfy your guests. For the chocolate lovers you have the black.. for those who don’t like chocolate you have the white ones. Plus it looks always better to have two colors instead of one.
I found the chocolate recipe in an old notebook I used two years ago. I must have written it down somewhere and forgot about it. I am very happy I found it this week, because it turned out to be really worth trying. They are very chocolaty and moist. Absolutely yummy 🙂
80ml vegetable oil
1 package vanilla sugar
2 tsp baking powder
3 tbs cocoa
75g dark chocolate
1. whisk egg
2. add sugar, oil, vanilla sugar and butter milk. Stir until well blended.
3. mix flour, baking powder and cocoa
4. add the flour mix to the fluid mix and stir until dry ingredients are moist
5. roughly chop the chocolate and add to the dough
6. Bake 20-25 minutes at 180°C /360°F
I used soy milk instead of the butter milk, as I do for almost all my recipes.
For the decoration I melted the remaining chocolate and put colorful sprinkles on top (there is not enough color these days 😉 )
For the white cupcakes I was thinking about either the white chocolate version, the vanilla version or something more different from the black ones. I decided for lemon cupcakes. They seemed to be the right choice, being light and fruity and just the opposite of the very rich chocolate cupcakes. Two very different tastes.. just like the colors black&white. Plus, the lemon cupcakes brings a hint of summer feeling back to us 🙂
Here is my favorite lemon cupcake recipe:
110g butter (softened)
1 tsp baking powder
lemon peel and juice of one lemon
1. mix butter and sugar until white and creamy
2. add eggs one by one
3. add flour, baking powder, some salt and lemon peel and juice
4. mix until well blended
5. bake 15-20 minutes at 180°C/360°F
I decorated these ones with the usual lemon-powdered sugar mix and some white chocolate on top. The lemon topping gives the cupcakes some more delicious lemon taste and makes them appear even more moist.
It is a very easy recipe and you can make these cupcakes in no time.
